so something i'll need to do in the near future is change my phone number, but i've been stalling purely because i've never had to change it before. a lot of things are currently tied to my phone number so it's going to be a pain to go back in and change everything. i don't exactly know what the process is like through visible, so anyone who's changed their number: how was the experience? do you keep your old number for a certain amount of time? how easy was it to go through and change 2fa accounts that require a number?

You can request a phone number change through Customer Care via Chat - once it's changed the old number is gone. That's the easy part - as you've noted the difficult part is notifying contacts of the change whether that be for 2fa or other purposes. 2fa is more problematic since some accounts don't have alternate ways to verify (e.g. email or a secondary number).
In my case a few years back, I wound up establishing a new account while keeping the old number active (i.e. ported out to a lower cost plan elewhere using dual SIM ) until I went through the painstaking process of notifying everyone over the course of a couple of months befor abandoning the old number.
