VZ tower that we utilize from our home in Sagle, ID is overwhelmed; is there a way to test what are coverage will be like if we decide to switch to VISIBLE?

You can sign up for the Visible free trial if your phone supports eSIM and is compatible with Visible. The problem with the free trial is that it will only provide you with the base plan experience - i.e. always deprioritized which may be unusable in overloaded areas.
If you don't mind spending a few bucks you could always signup for the Visible+ or Visible+ Pro Plans for a month and try it out on a monthly basis. You could then port your existing number in at a later date if satisfied. That's what I did way back when I originally signed up since I didn't want to risk losing my number with porting in and back out if unsatisfied. Read through some of the thread and you'll see that there are some sporadic problems porting in/out of Visible.
FWIW, I actually picked up a physical SIM at Best Buy - up until recently it wan't possible after that program was suspended, the good news is Best Buy is now back to selling prepaid Visible plans after a lengthy absence.

I've been on the basic visible plan for almost a year now. It's been great so far!

I agree about the base plan experience with the trial but in my case that is all I needed. I was on T-Mobile for a long time, and I signed up for the Visible trial, and I mainly wanted to test the signal, as the speed was pretty basic for the trial, but the signal, and voice quality were way better than T-Mobile's. I ported my number to Visible before the end of my cycle, Visible+ Pro, SWITCH26 promo, add the watch service with no issues. Speeds are amazing and I am very happy with the service. Phone bill went down more than a $100 per month for 2 lines.
