Can't speak to iPhone specifically, but in my case some connection settings are hidden on Visible (latest version of Android on a Samsung S21). Depends on the manufacturer's willingness to let a carrier have control over certain settings. I can actually modify them by rooting the phone or other unsupported means - but not worth the aggravation.
Perhaps someone with an iPhone will weigh in with a more specific reply.
