You would just need to follow the steps to transfer all your information from you iPhone to the new Android phone, for this you would have to Google on how it's done. As for eSIM your new phone would need to be eSIM compatible and it would need to pass the IMEI compatibility checker and then you can transfer the eSIM to the new phone in the app. With Android you also have the option to switch to a physical SIM, to do that you would need to contact custoemr service and have them send you a pSIM that you would have to be home to sign for when it arrives and you would then have to activate it.
