My phone has a physical SIM.
Apparently when switching to the new network I need to log into my Visible account. How does that work, seeing as I need to get a text for two-factor authentication, and I'll only be on WiFi at that point?
The person at Visible I chatted with said log in before I install the new SIM card, but that sounds sketchy since I should power off and remove the old card before installing the new card, right?
Anyone who has already gone through with this, please advise.

You will follow the steps in the app. It’ll have you verify your account first then have you switch SIM cards and activate. If you run into trouble, you can chat. Say “agent” twice and get a person. Also they can turn off 2FA and you’ll get the code via email at that point.
